The PX: Layering and depth through long wood maturation
The MARISOL RUBIO - CIPMA II is the most complex and richest expression of the Pedro Ximénez (PX) grape in the Bodegas Marisol Rubio range. Like the CIPMA I, it is a dry, oak-aged wine from Toledo (Castilla-La Mancha), but the CIPMA II distinguishes itself with longer barrel aging and an even richer texture, resulting in a layered, almost meditative wine. A rare, numbered 'Fermentado y Criado en Barrica' edition for the discerning wine connoisseur.

Grape
100% Pedro Ximénez (PX). The grapes are carefully selected for this top cuvée.

Vinification
Fermentation and extended aging in oak barrels. The longer Crianza allows for greater integration of the wood, complexity, and longevity.
Colour
Intense golden yellow, with a beautiful shine that points to the richness of the wine.
Aroma
Highly complex and evolving. Rich fruit (quince, dried apricot, orange peel) blends with distinct notes of roasted nuts, honey, beeswax, caramel, and refined minerality.
Taste
Powerful, full-bodied, and with excellent structure. The attack is rich and buttery, followed by perfectly balanced acidity. The long contact with the yeast cells (read: sur lie ) contributes to the incomparable creaminess and depth.
Aftertaste
Exceptionally long and persistent, with an elegant and salty finish that invites you to the next sip.
Serving suggestion
Serve at 12-14 degrees Celsius to fully experience its complexity. Can be stored.
