Son D Sol pays tribute to the Pedro Ximénez (PX) grape, but in an unexpected, dry, and fresh guise. This wine breaks with tradition and reveals the pure, aromatic finesse of this indigenous grape from the high-altitude vineyards of Toledo (VT Castilla), where it enjoys the intense Spanish sun.
Vinification & Character: The grapes are harvested by hand. The wine undergoes fermentation in underground concrete tanks with partial skin maceration , which gives the wine its depth and unique aromatic profile, without heavy oak aging. The result is a lively and gastronomic white wine.
Aroma & Taste: The nose is rich and refreshing with unusual yet intriguing notes of fresh basil, mountain moss, and bright lime zest. Swirling reveals nuances of tropical fruit and floral hints of yellow flowers and anise.
On the palate: The attack is dry and surprisingly fresh, thanks to a lively acidity that gives the wine joy and elegance. The texture is fine and the mouthfeel is supple. The finish is long, with a subtle, enveloping bitterness (think pink grapefruit) that makes it very versatile at the table.
